Ok, we have learned how to prepare many sweets, desserts and how to serve them at the end of the meal. But a dessert cannot be served without the right accompaniment of bubbles. But which is the most suitable? And how to choose it?
How to choose the right sparkling wine.
It is important to first look at the label. In fact, it represents in all respects the identity card of the wine. There is some information required by law that allows us to understand what type of wine we are buying. Maybe we won't be able to immediately understand whether it is a high quality wine or a simple "honest wine" (for that, perhaps, we can refer to the price). But there is some basic information that can guide our choice... In particular, if it is a sparkling wine, at a glance we can understand whether it is a sweet or dry sparkling wine. In fact, the value of the sugar contained must be clearly reported on each bottle. On the label, near the name and denomination, there is a small, vaguely French-sounding writing that refers precisely to this.
Which sparkling wine for which dessert?
The varieties of desserts and wines are endless and so are the related combinations. The desserts differ in the type of dough used (leavened or unleavened), the type of cooking (baked, fried) or not cooking and the fillings (creams, fresh or dried fruit, candied fruit, spices...). To make a good pairing you need to evaluate the characteristics of the desserts and the wine. Fisar has also identified evaluation parameters for the elements to which to assign a numerical value; the more similar the values are, the more correct the pairing will be. The characteristics of sweet foods to which a value can be assigned (ranging from 1 to 10) are: aromatic and spicy sensations, fatty and unctuous sensations, cooking times, structure and sweet sensations; while the characteristics of the wine to consider are: intensity and persistence, softness, acidity, tannicity and effervescence, aging and complexity, alcohol content and body and sweetness. The table below will help us clarify:
