The vast majority of artisanal ice cream shops that display the most disparate flavors in their refrigerated counters rely on the use of so-called neutral preparations, based on cream or fruit ice cream and semi-finished products, such as hazelnut paste, pistachio paste, to which other ingredients such as milk (strictly whole), classic sugar or dextrose (excellent anti-freezing), water, cream etc., depending on the flavor you want to prepare. The ice cream base is a product of the highest professional quality, very easy to use, thanks to both hot and cold processing. Thanks to its principles, it acts as a thickener, stabilizer and emulsifier and fully replaces a home-made artisanal ice cream base, which is absolutely not easy to achieve. The neutral ones, on the other hand, serve as thickeners to combine the fatty ingredients with the mixture and give the right consistency to the ice cream. Finally, the cream or fruit pastes are used to flavor the ice cream base. You will say: "It's all simple, so artisanal ice cream no longer exists!" It's not really like that! Making artisanal ice cream with semi-finished products simplifies the process, but it is still necessary to dose all the components in the right quantities, and it is possible to give a more or less strong flavor to your product. That is, it is possible to give the ice cream a consistency, creaminess and flavor that are the trademark of your ice cream shop. Finally, preparations already dosed, flavored and ready to use without any effort exist and are constantly evolving in terms of quality and practicality. Today it is also possible to prepare an excellent yogurt ice cream at home, using the ice cream machine, obtaining a product absolutely equal to what a real artisan ice cream shop can make.
