What are food flavors?
Flavorings are substances used to flavor and perfume foods. Examples of aromas are: spices such as cinnamon, nutmeg, pepper, herbs such as thyme, chives, rosemary. Among the most popular aromas for the preparation of desserts, we certainly find those with a vanilla flavour, used in particular for the creation of the tasty Chantilly cream.
Categories of cooking flavourings: natural or artificial
We distinguish three families of aromas:
- Natural flavours: extracted from some vegetal or animal raw materials. Existing in their natural state, they can be subjected to a series of transformations (extraction, concentration, distillation, roasting, fermentation or enzymatic reaction). in this way you will have natural aromas with at least 90% of the original element.
- Non-natural-identical flavours: are natural and composed of the same molecules as natural flavours, but are obtained by chemical synthesis.
- Artificial flavours: are flavoring substances that do not exist in nature but are obtained through chemical synthesis.

- Bitter Almond Flavor: used for the preparation of many delicacies, ideal in particular for the creation of carrot cake, pancakes, or almond pastries.
- Lemon flavour: used in particular for the creation of fruit, cream and ricotta cakes and also soufflés
- Orange Blossom flavour: suitable for making fruit cakes, biscuits, and in particular in Neapolitan pastry making
- Anethole aroma: highly widespread in nature in essential oils, which gives the flavor of anethole, anise and fennel.
