Procedure
Mix American Cookie, Olva Gateaux Melange and the eggs in a stand mixer with paddle attachment until a solid "shortcrust pastry" dough is formed. Finally add the Chocolate Chucks (or pieces of chocolate) and mix at low speed. (Mixing times depend on the quantity of dough and the type of mixer) Form a cylinder of 5.5 cm in diameter and leave to cool in the refrigerator for at least 1 hour or until the product is hard. Once the dough has cooled, cut into 2.5 cm thick discs (approximately 80 g) and place on a baking tray previously lined with baking paper. Maintain a certain distance between the discs (approx. 6 pieces per 60x40 cm pan). Place some Chocolate Chucks or colored chocolate buttons on top of the cookies before baking.
