Lactose-free spreads can be practical fillings for pastry, bars and home baking. Choose the specific cream for its flavour, ingredients, intended use and storage conditions.
Read dietary claims separately
Lactose-free, milk-free, vegan and gluten-free describe different characteristics. A lactose-free product may still contain milk ingredients. Check the complete ingredient list and allergen and trace warnings for the selected cream. Do not assume that any one claim makes a product suitable for every dietary need.
Applications
Depending on the cream, use as a spread, pastry filling, decoration or flavouring for another preparation. Dolcincasa lactose-free varieties include pistachio, hazelnut and cocoa, coconut, almond, coffee and hazelnut, and toffee flavours.
Before and after baking
Use before baking only where the product directions allow it. Some creams support both applications; others are intended for use after baking. Freezing suitability also depends on the product and the complete dessert.
Recipe planning
Check the other ingredients in your croissants, cakes, pancakes, creams and toppings. Adding a lactose-free filling does not make a pastry lactose-free if the rest of the recipe contains lactose. Keep the original product information available when preparing food for customers.
Storage
Follow the jar's directions and best-before date, including after opening. Do not apply one shelf-life or refrigeration rule to the whole range. Prepared desserts may have different storage requirements from the unopened cream.
