Whole Milk Powder Spray-dry technique: this procedure is based on the atomization of pasteurized and homogenized milk and sprayed through thin nozzles which form very small droplets which, passing through a chamber where a stream of hot air at 150 °C evaporates the humidity present, forming dust.
Types of Whole Milk Powder:
Powdered milk is traded in three types: whole powdered milk, partially skimmed and low-fat. Italian law requires a fat content of around 26% for the whole type, 13 to 17% for the partially skimmed type and a fat content of no less than 0.5% for the lean type. The reconstitution of the milk powder must be done with water that is not too hot and adding the powder "like a rain" so that no lumps form.
The powder-water ratio to reconstitute one kilo of milk is set at:
- whole: powder 100 g, water 900 g;
- partially skimmed: powder 100 g, water 900 g;
- low-fat: powder 120 g, water 880 g.
