Irca Isomalt

Pure crystalline isomalt for the preparation of sugar decorations.

ISOMALTO is a sweetener derived from sucrose.

It has greater thermal stability than the latter and absorbs humidity less easily, thus allowing sugar objects to maintain their transparency, brilliance and durability for longer.

To make "cast" objects:
Completely melt the Irca product using microwave ovens, stoves or induction plates, then pour the melted product into the appropriate molds.

To make "pulled" or "blown" objects:
Melt the product at 180°C and stop cooking by immersing the container in cold water. Add approximately 20-30 g of water per 1 kg of ISOMALT in small additions, then deposit on Silpat sheets and proceed with the different creations. It is possible to keep the product workable by using the special lamps.

To make "boiled" sugar:
Spread the product between two sheets of Silpat and bake in the oven at 180°C for 5-10 minutes. Leave to cool and break the boiled sugar into small pieces to decorate the desserts.
