Bourbon Vanilla pods from Madagascar in a vial, minimum 16/17 cm long.

This vanilla is characterized by a typical vanilla aroma and an excellent scent. Furthermore, it grows in the Andapa-Sambava Antalaha area, located in the lands north of Madagascar.

Description.

After nine months on the vines, the green pods are picked by hand. The slow and meticulous preparation which takes place over several months allows you to obtain a beautiful black pod with a unique aroma and scent.

Vanilla extract is made from pods chosen for their aromatic intensity. Natural vanilla extract is a ready-to-use ingredient that can be used in most vanilla recipes. You can replace the vanilla pod with two or three teaspoons of extract.

Natural vanilla is used in both desserts and savory dishes. The pod is used in recipes that require infusion in milk or cooking in a pan with butter.

Tips for use.

The pod:

  • With a pointed knife, split the pod lengthwise.
  • Scrape the inside to recover the seeds. The aroma is contained in the pod and seeds.

For example, you can put the pod and seeds in milk and leave to infuse for at least 30 minutes. After use the pod can be used to flavor sugar. You will need to clean the pod, let it dry and place it in the container of powdered sugar.

Always shake the bottle before use to obtain better dispersion of the seeds.

Conservation.

Store the vanilla extract in an airtight container away from light and if possible in the refrigerator. Bring it back to room temperature 5 or 10 minutes before using.

Ideal uses.

The pod: custard, crème brulée, ice cream, all fruit in general, biscuits, white meats and fish.

The natural extract: cakes, mousses, meringues, jams and all creams.
