Base Gelato Flavors Crema is a semi-finished powder for the preparation, both cold and in a pasteurizer, of milk base mixtures with a neutral-milk flavour. It gives the ice cream a fine, satiny, spreadable structure with excellent preservation, good increase in volume and persistent flavour. Excellent for preparing ice creams with a pleasant and delicate milk flavour.
Gluten-free product.
Appearance: White free-flowing powder with a faint odor and flavor of milk and a fatty note.
Ingredients: Fully hydrogenated vegetable fats (coconut), glucose syrup, skimmed MILK powder, dextrose, emulsifiers: E472b, E471, E477; stabilizers: E466, E410; MILK proteins. May contain: SOY, EGGS, ALMONDS, HAZELNUTS, WALNUTS, CASHEWS, PISTACHIOS.
How to use: 100-110 g of product, 230-250 g of sugar, 1 liter of pasteurized milk. During preparation, the liquid base mixture can be customized with the addition of other ingredients such as: cream, etc., depending on the characteristics desired in the final product. In cold processing, it is recommended to let the mixture mature for at least 30 minutes.
Storage: The product must be stored in the original container, in a cool, dry place.
