Characteristics.
The Mix for Shortcrust Pastry and Biscuits is a free-flowing white powder, practically odorless and tasteless.
Ingredients: Rice flour, sugar, CORN starch, stabilizers: E412, E466; emulsifiers: E475, E433; acidity regulator: E575; flavourings, salt. May contain: milk, soy, eggs, almonds, hazelnuts, pistachios.
Storage: The product must be stored in the original container, in a cool, dry place. It will keep its original characteristics unaltered for at least 30 months from the date of production.
How to use.
Recommendations: 1,000g of product, with 400g of butter or margarine and 160g of egg yolks or 3 whole eggs (approximately 150-160 grams). Sand the mix with the cold butter or margarine cut into pieces by hand or in a planetary mixer with the paddle attachment, until you obtain a sandy effect. Add egg yolks or eggs and work until you obtain a smooth mixture. Wrap in cling film and leave to rest in the fridge for at least 30 minutes. It can be frozen. Bake in a preheated oven for approximately 25-30 minutes at 170°C for biscuits and 180°C for tarts.
