The Mortarella
The Mortarella hazelnut from Campania has a medium-small size and is characterized by non-uniform and small fruits. The shape is slightly elongated, sub-cylindrical and laterally compressed, it is distinguished by the easily detachable perisperm (the internal film). The shell is quite thin, light brown in color, with slight streaks of a more intense color and slightly flattened in the lower part. The pulp is aromatic, firm, white-ivory in colour; with a fine flavour, when toasted it recalls hints of bread crust and caramel.
Mortarella is cultivated in almost all the hazelnut areas of Campania (with the exception of the Giffonese area) due to its valuable characteristics of suitability for processing. The municipalities in the province of Avellino that fall within the production area are: Mercogliano, Monteforte Irpino, Mugnano del Cardinale, Ospadaletto d'Alpinolo, Diecici, Sirignano, Summonte, Taurano.
Features: the product is characterized by its crunchiness, a characteristic that is maintained over time if the product is stored closed in its original packaging in a cool, dry environment. It finds multiple uses both in ice cream (for example for the "Bacio" and Hazelnut flavours, etc.) and in artisanal pastry making (in cakes, semifreddos, mousses, etc.).
