Piedmont Hazelnut Paste - Tonda Gentile Piemonte delle Langhe
The Piedmont Hazelnut Paste is obtained from the processing of fine hazelnuts of Piedmontese origin, which constitute its only ingredient. In fact, it does not contain any aromas or emulsifiers.
Appearance: Semi-fluid paste of hazelnut colour, with an intense odor and characteristic flavor of hazelnuts.
Features: Tonda Gentile Hazelnut Paste with a creamy structure, obtained from the processing of fine hazelnuts of Piedmontese origin (Tonda Gentile delle Langhe), which constitute the only ingredient.
In fact, it does not contain any aromas or emulsifiers. It is the perfect product for the preparation of hazelnut ice creams, creams, flavored creams and due to its organoleptic characteristics it lends itself to multiple uses in artisanal pastry making. Hazelnut Paste is characterized by not too strong toasting and a delicate colour.
Ingredients: Hazelnuts. May contain pecans, gluten, soy, milk, almonds, walnuts, cashews, pistachios, peanuts.
How to use: 80-100 g of product per liter of milk-based mixture, white or yellow, according to habits. In pastry making: in variable doses according to needs and habits. Mix well before use.
The Tonda Gentile of the Langhe
The Tonda Gentile delle Langhe is a particularly precious variety of hazelnut, also due to its rounded shape, which favors quick mechanical shelling, whilst keeping the seed intact.
The thin shell offers a high yield of shelled product from 46 to 50%. The seed is known for its good aroma and delicate flavor that distinguishes it.
Other characteristics: The fat content is limited and therefore has good shelf life without rancidity problems. The thin film that surrounds the seed is easily removed after roasting.
Area of cultivation: The Tonda Gentile delle Langhe is a variety of hazelnut produced in Lower Piedmont, including some areas of the provinces of Cuneo, Asti and Alessandria.
